Even when the sun isn't shining this dish makes a perfect summer time lunch and will be sure to brighten your day. Quick and easy to prepare and perfect for making in advance to take to work or a summer picnic.

Lemon and chilli quinoa salad.

Serves 1

50g quinoa (uncooked)
1/2 lemon
100g cucumber, chopped
Large handful of rocket
Pinch of Himalayan salt
25g roasted pecans (or nuts of choice)

Dressing:
1 tbsp almond butter
1 tbsp of olive oil
1/2 juice of lemon
1/2 tsp of chilli flakes

Cook the quinoa with the juice of half a lemon for around 10 minutes in 200ml of boiling water. Then leave to cool whilst roasting the pecan nuts for 5 minutes.

Mix the dressing ingredients

Mix the quinoa, rocket, cucumber and dressing together and top with the nuts!

And VoilĂ .

Simple, super easy, super quick and only 579 calories per serving.
